Labor Day at Lake Michigan

The last hurrah of summer vacation. We spent Labor Day at Lake Michigan which is only about 30 minutes from our house. I've always loved living so close to the beach in the summer!

My father-in-law owns a home in Norton Shores that has deeded lake access. We get our own private beach when we visit. There's something so peaceful about being at the beach.

The water wasn't warm enough to swim on Labor Day so we'll have to wait for next summer. Oh, how I will miss summer!!!

Luncheon Sandwich Recipe: Tuna Puffs

My grandmother would serve these sandwiches at birthday parties or as a light meal. This recipe comes from an old dutch cookbook which every woman in our family owns and uses. I refer to it as the dutch cooking bible It's full of rich, scrumptious recipes!

Tuna Puffs - 6 servings

1 6oz. can tuna, drained
1 tbsp. green pepper, chopped
1 tsp. onion, chopped
1 tsp. Worcestershire sauce
1/2 tsp. mustard
3/4 C. mayo
6 tomato slices (optional)
3 English muffins, split
1/2 C. shredded American cheese

Mix tuna, green pepper, onion, Worcestershire sauce, mustard and 1/2 C. mayo together. Spread tuna mixture on English muffins, top each with tomato and cheese. Broil until slightly browned.

My crazy cleaning confession? I had my first house for 5 years before I had Haley. Looking back, I must have been bored a lot because I cleaned my house all the time! My friends made fun of me! I'd skip on the chance to go out for coffee so I could stay home to clean and organize. Crazy for sure! I'd move the appliances once a month to clean under them. I would vacuum my way out of each room and create this perfect design of vacuum marks in the carpet. Now, I would much rather spend time with my family than clean the house! I have a confession........I haven't cleaned under the appliances in well over a year and you won't find perfect vacuum marks in the carpet.
